The world learned about the potential dangers of acrylamide through the train tunnel. This discovery was new, but acrylamide is present in our diet always, since the invention of cooking.
Acrylamide is formed during the reaction between the natural amino acid asparagine and some carbohydrates. It will not be raw or cooked protein-rich foods: milk, meat or fish. It does not matter whether your fried or baked food is organic and vegetable oil and useful. The only thing is temperature.
