But the relationship between dietary acrylamide and the development of cancer is far less obvious.

The world learned about the potential dangers of acrylamide through the train tunnel. At first suspicion fell on sweet buns with filling. After a time, the high level of acrylamide found in coffee and potato dishes. Then it turned out that acrylamide is formed in foods rich in carbohydrates as well as foods cooked at temperatures above 120C (fried or baked). This discovery was new, but acrylamide is present in our diet always, since the invention of cooking.

Acrylamide is formed during the reaction between the natural amino acid asparagine and some carbohydrates. It will not be raw or cooked protein-rich foods: milk, meat or fish. It does not matter whether your fried or baked food is organic and vegetable oil and useful. The only thing is temperature.

At the time, researchers proposed a compromise: to cook until Golden, not brown or black crust. This limits the formation of acrylamide, but if you cook meat or fish if the temperature is too low, decrease the chances to kill all of the bacteria, and the risk of food poisoning increases.

Scientists identified the source of acrylamide, but set his unconditional Carcinogenicity when consumed with food still failed. Review of 2015 showed that acrylamide in foods is not associated with the risk of the most common types of cancer, although there is a small correlation with kidney cancer, endometrial cancer and ovarian cancer.

Animal tests showed the potential danger of high levels of such chemicals, but their concentration during the experiments was much higher than people get with food. Some studies do show a link of grilled meat with an increased risk of cancer, but its hard to confirm for sure.

Of course, boiled and steamed food is not always looks delicious as kebabs or doughnuts during frying or roasting generates a lot of molecules, amplifying the aroma and flavor of the dish.
